Modified hop extracts make up a sizeable chunk of Kalsec’s business, and their products have improved the brewing process for many companies. The advantages of hop extracts are their efficient storage, cheaper transportation costs, improved storage stability, bitterness consistency, and greater hops utilization. Recently, modified hop extracts have received increased scrutiny within the EU. Given the European Union’s already stringent label laws, there is concern that beer makers will have to label their products with “modified hop extract” rather than “hops”. There is nothing harmful about modified hop extracts and they are generally recognized as safe (GRAS) for human consumption by the FDA, but the customer’s perception and the negative connotation surrounding the word “modified” in food products ande could force brewers to move away from these ingredients. The current goal for the hops team is to discover naturally-occurring hops compounds that can function as bittering agents and provide light and foam stability to beer.This SIP is confidential and not distributable.
