Sugar Beet (Beta Vulgaris) is a highly salt tolerant plant at adulthood; however, seedling germination and field emergence is suppressed by high soil salinity. This presents a problem to growers in areas known for high soil salinity. There are many biological mechanisms and pathways which deal with environmental stress. The present project focuses on the role of glycine betaine and other key metabolites in osmoregulation of germinating Beta Vulgaris seedlings. Seedlings from various seed accessions were germinated in a gradient of salt solutions and compared to those grown in water and a peroxide control. Using LC/MS/MS metabolomic analysis it was shown that seed varieties known for salt tolerance have higher average metabolite concentrations than a variety not know for salt tolerance. Seeds germinated in higher salt concentrations also show a decrease in betaine and choline metabolites in response to higher salinity. These data suggests that seedlings of various varieties start their life with an initial mass of each metabolite which is then consumed as needed to maintain homeostasis in saline conditions.
