Abstract
This project was undertaken in an attempt to do a structural determination of the high molecular weight component. The question of whether the material was actually high molecular weight material as well RS the structure and form of molecular interaction served as the basis for the study. Amino acid analysis of all nisin samples which underwent column chromatography, redistribution by a counter current distribution apparatus (upper phase butanol, lower phase 25% acetic acid) and reactions with methyl mercaptain, cyanogen bromide, or 1-fluoro-2,4-dinitrophenyl benzene were used in an attempt to identify the material.
