Abstract
The present study is the continuation of an investigation into the pH-dependant reversible transition in the conformationof beta-Iactoglobuuin between pH 7 and pH 9. Beta-lactoglobulin is isolated from the milk of cattle, goats, and several other mammals. The present study is investigating the properties of bovine milk beta-lactoglobulin of which four genetic variants have been isolated. Of the four variants only two, betalactoglobulin A and B, are commonly found. Only two variants are ever present in the milk of a single cow and present in an almost one to one ratio. The titration curves of these two variants differ only in a slight shift of the curve to lower pH in the A variant due to the two extra side-chain carboxylic acid groups.
