dc.description.abstractThe purpose of this project is to find a flavor fingerprint via capillary column gas chromatograph for the different vanilla species and also try to distinguish between growing regions and quality. Our desire is to produce a method that is not time consuming, but very informative using the GC. The project was proposed by Zink and Triest which is located in Montgomeryville, Pennsylvania. They are the leading importer of vanilla beans in the United States. Zink and Triest proposed this project in an effort to stay ahead of its competitors in the race for further technical information about the composition of vanilla. They felt that they needed to offer their customers further information on the chemical and sensorial structure of the vanilla flavor profile. Zink and Triest is in the process of installing a new chemical laboratory, so all experimentation was done at the A.M. TODD Company, the parent company of Zink and Triest(Z&T), based in Kalamazoo, Michigan.
